it's too long to post, but for wine check out "first steps in winemaking" by
c.j.j. berry. page 114, "peach perfection". it's an older recipe, but still referred
to by many. i haven't tasted it yet, but have 5 gallons going now. imo, peach is difficult to clear, but time always does it in my experience. hth, jim
ps. you might check out half.com. that's where i got my copy.
