Catfish quesadilla
I like using a large flour tortilla. Fold in half.
Now on one half
Spread on some sour cream, onions, shredded cheese, Beans( Ilike using 15 bean soup for this part --but red beans out of a can will work) andcatfish or crappie.
Put on a grill or in the oven and toast both sides. Remove andadd tomatoes and lettuce.
