    I like to coat the filets in mustard(sandwich mustard), and roll them in a mixture of 60/40 cornmeal and flour(more cornmeal and add seasoning to mix). Cook for 5 to 10 minutes at 350 degrees depending of thickness of filets) The combination of the mustard and cornmeal make a crispy coat on the fried fish.

    Our favorite is Southern Star Fish Fry Seasoning distributed by Jerry Daniels out of McLeon TX. 903 796 7679. It is nice and spicey.

    this thread started with using pancake mix for fish. get the kind where you just add water and put in a good heapin' tablespoon or two of horsradish, i'm tellin ya it is awesome!

    this is really good with deer also dip in mustard ,roll in flour ,and deep fry

    I'm sure there's lots of good recipes...another good one we use with fish (especially crappie) is any onion ring batter. quick, easy, golden brown, and great tasting...
