    Default Blackened crappie filets


    Thumbs UpI done a search and didn't turn up nothing on blackened so here goes.Be sure and do this outside unless you have a commercial vent or hood.(smokes like a train!) Take a stick of real butter and melt into a small pan or dish with about 1/2 cup of olive oil. Set that dish beside outdoor burner on your grill.Turn grill side burner up on high and get a black iron skillet white hot,no oil or grease.Take your filets and season both sides with a good cajun season mix like Tony Cacheries,dip them in the butter oil mix and lay in hot skillet.About 2 minutes each side. I lay mine on a platter as they get done and tuck them under the hood of the grill to keep warm until all filets are done. Excellent with a salad and some crusty type bread. Side of rice is good too.Hands Clapping

    Beleive it or not when butter is brought to this kinda heat it takes on an almost nutty flavor.This works good on bass filets too. If you like it hot add some ground red cayenne to the seasoning.Another bit of info, the leftover cold blackened filets make killer sandwiches for the next days fishing trip.
