Blackened crappie filets
Thumbs UpI done a search and didn't turn up nothing on blackened so here goes.Be sure and do this outside unless you have a commercial vent or hood.(smokes like a train!) Take a stick of real butter and melt into a small pan or dish with about 1/2 cup of olive oil. Set that dish beside outdoor burner on your grill.Turn grill side burner up on high and get a black iron skillet white hot,no oil or grease.Take your filets and season both sides with a good cajun season mix like Tony Cacheries, dip them in the butter oil mix and lay in hot skillet.About 2 minutes each side. I lay mine on a platter as they get done and tuck them under the hood of the grill to keep warm until all filets are done. Excellent with a salad and some crusty type bread. Side of rice is good too.Hands Clapping
