I Brine mine for about 2 days. 2 gallons of water. 1 1/2 cups each, salt and brown sugar, then toss in some fresh Rosemary, sage and thyme. I throw it into a really good ice chest that'll hold ice for a few days and add in about 3 or 4 bags of Ice. Check this Video out, this is what I'm doing this year.
