Very simple, just layer your fillets in a caserole dish with rice, mushrooms, peas, monterey jack cheese, and cream of chicken soup. Start the bottom layer with rice, then place your fillets on the rice top with mushrooms and peas, cover with a layer of cheese and repeat to fill caserole dish. Bake about20 minutes at 400 then top with parmesan and rebake for about 3 minutes. Simple and healthy.
