    Default Blackened Crappie


    I've been messing around with a new recipe for crappie that my wife and I really like. It's a little spicey but tastes real good. First I sprinkle the inner side of the fillet with a generous amount of garlic powder, then sprinkle some salt, black pepper, red pepper, paprika, old bay, then sprinkle on just a little yellow corn meal and then pat down a little. In a skillet pour about 1/4-1/2 inch of canola oil and get it hot on medium high heat. Put fillets in hot oil with seasoned side down. Let them cook at least 3/4's of the time on the seasoned side where they will get that blackened look. Turn and cook for a short time on the other side. Good stuff!
