• Corn Flakes Crusted Crappie with Hollandaise Sauce

    I had 4 Jumbo Slab fillets left from our Ross Barnett trip and felt it was time to cook them up. Nothing special, rolled the Corn Flakes in a Ziploc till fairly fine, Tony's seasoned the fillets first. Afterwards tossed in AP flour and allowed the flour to wet out before a dip in a Buttermilk Egg wash and into the crushed Corn Flakes. Baked at 350 degrees for 30 minutes before plating. I have had a craving for Rally's Seasoned Fries which I ran thru the Air Fryer so they were crispy. Couldn't decide what to dip the fries in so I pulled out a few choices.



    The Hollandaise is Knorr packet stuff, after all this is just lunch.............

      I just made a sandwich with the leftover Fillet on Sourdough bread my wife just baked. I put Romaine Lettuce, fresh homegrown Early Girl Tomatoes, Hamburger Dills, Mayo, Tarter, and Franks Red Hot sauce. What a lunch! Reheating a bunch of leftovers together in the Air Fryer where the Corn Flake Crusted fillet was laying absolutely no grease. I am wondering if Rice Crispy cereal would work too.

      They do look good but I guess i'm old fashion. I prefer coated with corn meal and fried in lard.

      I sure could not make my Tamales without real, pure, Lard. No problem with being old fashioned these days because we have Plumbers to take care of the problems that arise. (Cardiologist)

      Sure looks good. My bride does an artichoke stuffing mix that she coats the fish in and then bakes it. My grandson calls it the BOMB!!
