LowePro what type of breading you use on the fish, it looks nice and thin, hate fish when breading is thicker than the fish. Have fork and knife will travel.

My in-laws have a restaurant and I am able to order fish meal thru their food provider. I believe it is from Sysco. I buy it in 25lb bags for $25. I also use corn meal mix, corn flour, and cornmeal in a ratio of 50:25:25 then add seasonings of choice.
Any meal will work. But the secret (not really a secret but for some reason most are unaware of it) is I take a shower towel and pat my fish totally dry before I drop them in the meal. Then I meal them. When they come out of the meal they look like they don't have near enough on them, but they do. Drop them in the grease and they come out perfect and crispy.
I used to think I needed the fish wet to get them thoroughly coated with meal. And I had a bunch of excess and also ruined my grease from all of the cornmeal coming off. I am on the same grease that I bought April 2014. And every batch of fish keeps getting better and better. Of course I strain the grease and put it back into their containers when I'm done but still it's a year and a half old lol
If ur grocery store does not have corn flour... Use corn meal mix and regular corn meal in a ratio of 75:25. Come on down anytime and I will throw some together brother!
