    I suppose any fish or crab cakes recipe would work but I picked the simplest I saw on the net. They were good.

    1 pound boneless bream meat
    2 teaspoons salt, plus more for boiling bream
    1 teaspoon Cajun seasoning, divided
    6 tablespoons olive oil, divided
    1 small Vidalia onion, finely chopped
    1 egg, beaten
    1/4 cup self-rising flour

    Parboil bream in salted water until fish just starts to flake. Remove from water and drain. Flake fish and toss with 1/2 teaspoon Cajun seasoning. Chill.
    In 3 tablespoons olive oil saut� until tender onion, 2 teaspoons salt and remaining Cajun seasoning. Chill.
    Combine, bream, onion, egg and flour and refrigerate mixture.
    Heat remaining oil in a skillet. Carefully spoon small portions of bream mixture into hot oil. Brown cakes on each side, turning carefully. Remove from oil to drain. While cakes are still hot, season with additional salt and Cajun seasoning if desired. Serve hot.

    Love dem bream. I don't know how to catch them in the cold though....
    Crappie are snobby..... Why can't they be easy to catch...Like bass?

    These bream are 30" deep on a ledge of an old river that drops into 40' water. caught them on the bottom with worms. Surface temp was 53 degrees.

    Great looking bluegill both before and after! Also, a dang nice Maumelle largemouth.

    My Monday fishing buddy and I have caught a lot of big bass on Maumelle while crappie and bream fishing in deep water.

    I like to use bream to make "poorboy shrimp", fillet and boil in crab/shrimp boil, serve with cocktail sauce.

    Possum , hope your planning on being at Crappie camp. Reckon you could make a test batch at the fish fry?
