My new style of cooking them is on a cedar plank grilled on the BBQ grill with some butter, garlic and Old Bay on them. I won't say it beats fried fish cause that can't hardly be beat but you should really give those planks a try if you've never grilled them like that. I've tried catfish and bass on the planks since and they ain't bad either. Crappie have been at a premium here lately as the deep clear water lakes of HS will starve a guy to death unless you keep some of those small spotted bass. A bit off topic here but another way is to make a foil bag, add butter, onions, cilantro, and lemon pepper with those crappie fillets.
