    I cook in the green on the Cajun cooker about 350. What I try to do is watch the temp as it comes up. When it gets to 300 the hush puppies go in. by the time it gets to 325 they're done and the larger fillets (fish my wife catches) start going in. The smaller fillets (all the fish I catch) go in last due to less cooking time.

    I slop my filets in a mixture of yellow mustard and Louisiana Sauce (1/2 and 1/2). Then bread them in my favorite bredding. I like to mix my own when I have time..... Onion powder, garlic powder, celery salt, lemon pepper, white pepper along with the yellow corn meal. I don't trust my thermometer any more; burnt too much grease in my time. I watch the oil and when it starts swirling, I will put my "taster" peice in. I reduce my heat constantly.

    Fried fish is the only way to go. Put the first fish in at 375 and try to keep temp between 350 and 375. I fry fish....don't boil them.

    Our puppies...an egg, corn meal, chopped peppers (my wife doesnt like anything with heat so it's bale peppers around here), onions, and some grated cheese.
