Peanut oil vs Vegetable oil vs.....

If you're dumping the oil after a single use, pretty much anything but olive oil will work.

If you're saving oil to re-use, peanut is good but when it goes rancid, it is very bad (and strong flavored). Canola would be my second choice followed by soybean (which the two are often mixed for fryer oil). Vegetable is okay but breaks down too much to re-use, IMO.

Joe I looked on cajun fryer website and it said most use vegetable oil. This is from their website

I agree with Brian P. I have a Cajun Fryer and have used the same rice bran oil for about 25 - 30 cookings now. Can't tell a difference now from when it was brand new. It really is good stuff. It's an Arkansas product as well which I prefer.

I bought it at the Riceland gift shop in Stuttgart. I'm pretty certain that it's carried at area stores as well. Possibly Wal-Mart or Sam's.

If you want the absolute best taste use Lard. No joke, it is good. However, I never use it myself because it is sooo unhealthy. I don't like canola myself, I usually just use vegitable oil.
