I grew up in Hamburg and in the early years (30 yrs ago) they cooked armadillo at the annual Hamburg Armadillo Festival. I had one serving off the barbeque and it wasn't too bad. I don't believe they actually cook it at the festival anymore.

I have as well eaten beaver, took em to Lindsay's BBQ and had them cook em, I think we got back half of what we took em. ( I think they kept some)
Fried rattle snake, taste like chicken texture of fish.
But the strangest of all is one of them huge grass hoppers. I stuck it on a piece of wire and roasted it for a min, it was one of them ( Hey.. Hold My Beer!) thoughts.
To be honest it was pretty good... If you can imagine a combination of almonds and shrimp.. Will probably do it again.

Worked in South La. for about 30 years if it moved they would eat it did not matter they would take it and turn it in to something really really good to eat . short story bear with me had a inland drilling barge stacked in marshes near new orleans there was two of us on the rig and we were short of groceries partner was full Cajun asked if I wanted some coon here we were out in the marshes you could see for miles only marsh grass and canals what could any mamal possibly eat not a tree for 50 miles this redneck says this guy has lost his mind he says come on gets a piece small pipe about 4 ft long we get in small boat paddle over to to marsh he jumps out and says stay in my tracks I jump out and sink to my armpits he finally gets me out we continue him walking tall me wading and fighting the marsh eventually while I was trying to get out of a hole he walks up with a coon we get back to rig he cooks the thing you can not imagine how good it was that scenario was repeated over the years if it moved they could turn it in to some thing special.

Coon is good if dressed properly (got to get those glands out). I knew an old man back in the early 80's that could cook the best coon around. Said he "practiced on possum during the depression"!

Tripe, chitterlings, chicken egg embryo's, but those were dares :D But I ate them!
Most memorable was minnows Thumbs Up I purchased $3 worth of minnows from a convienent store in Des Arc, well they didn't catch me anything so I had many a minnows left over. I was soooo madthat I decided to deep fry them boogers and eat them. BADDD mistake!
They didn't taste so good! Be warned everyone! :p
We eat crappie eggs, pretty good, but strangest I guess is turtle, pretty good stewed!

Chitlings was the worst I ever ate, a can of old smoked oysters is second worst.
