    Default Slab Fillets over Grits


    I just had to do it, those 2 fillets from the 1.54# White Crappie Slab entered into memory lane this morning. I rarely use what Drusilla's Seafood Blackened Redfish seasonings I have left but this Fish demanded the Best stuff in the house. After melting 1/3 stick of butter and pre-frying the seasonings to ensure a good crust I cooked the fillets skin side up first. This applied a nice crust before flipping once.

    The two fillets almost cover a 1/2 cup of uncooked grits (about 3 cups volume when cooked). Back in the recliner for a little digestion time before attacking the day.

    Seems like a good start to the day to me! I still need to try grits one of these days.

    A great way to start eating grits is to prepare your grits by the recipe on the container, spread out the cooked grits on a cookie sheet that has been buttered about 1in thick and refrigerate. Once cold, cut into rectangles about the size of a nice fillet then pan fry the grits cake in butter. Topping that with a Blackened Crappie Fillet is fantastic. I'm just too lazy & always too hungry to wait to eat.

    I first noticed fish for breakfast the first time that I went to Japan on a business trip 11 years ago, and considering how healthy they are perceived to be despite long work hours, they may be onto something.
    If I'm not at work or taking kids to their activities, you might find me on "The Rez" fishing. If not there, I could be in the garage working on my boat.

    Enjoyed many, many meals of fish, grits, hush puppies, and sliced fresh tomatoes.

    I eat fish for breakfast twice a week. May be why the Crappie are scarce lately.

    Grunt as a Channel Mullet? Croaker? The name rings a bell But I can't associate the fish species.
