    Default Bon Temps' Leftover Boiled Crab Pizza


    I have a couple of good friends, one boils the best Blue Crabs I have eaten and the other can clean a Blue Crab in 90 seconds. I put both to work. Bon Temps sent me home with some leftover Crabs so I called my other friend over to give me a quick tune-up on his families Crab cleaning technique. They have cleaned Blue Crabs for their Grandfather for 50 years so He could make his Stuffed Crabs to sell to the restaurants and Seafood Markets along the Gulf Coast.

    Starting out with a 450 degree oven and the rack on the bottom setting I oil the black iron pizza pan with a thin coat of Greek Olive oil.

    Once oiled I dust the pan with cornmeal using a strainer to blend it well. This prevents the crust from sticking.

    Now I stretched the crust on the pan so I do not have to transfer it after as I don't want to "pop" the yeast gas bubbles. The finger tip stretching technique handles the task flawlessly.

    Toppings are Bertolli Creamy Basil Alfredo for the sauce. This is important, I've tried all their Alfredo sauces and hands down this is the best for a pizza white sauce. Next, staples in our pizza making with the addition of thin sliced yellow Bell Pepper. Purple or Salad Onions and canned Mushrooms (Sorry SuperDave).

    I sauce this 14in pizza out close to the edge with a lot of sauce. The top of the crust is wet with it, not thin like using a red sauce.

    The dynamic duo Walmart Shredded Italian & Mozzarella cheeses, heavier on the Italian and it goes down first when you get to the cheese addition step. A mountain of fresh picked, shell free, of Bon Temps' Crab meat. Now the Purple Onions then Yellow Bell Peppers, mushrooms followed by the cheeses.

    Into the oven for 20 minutes for a perfectly cooked Pizza. SuperDave said it looks like a giant Chocolate Cookie. I bet this Iron Pan would cook a Killer Chocolate Chip Cookie. That would be a Kaboom for sure.

    It's like biting into a Maryland Crab Cake and a White sauce Pizza at the same time. Enjoy.

    You got me wondering, I was fixin' to try to make Persimmon cookies. Maybe one big Persimmon cookie?
