    Default Big Crappie of the Trip Poor-boy


    Well when that biggest Slab caught on Ross Barnett passed over my gunnel I made a plan for her.

    I could barely keep one fillet within the bread slices so the other was topped with some Frank's Red Hot like the one in the picture before being destroyed. The bread was so fresh there was steam within the wrapper. Homegrown tomatoes, fresh Iceberg, lots of dill pickles on the side. YUM, what a lunch!

    The taste of The Rez Crappie has sure improved from earlier years. I would sure like to know what changes in conditions make them taste so clean or like catfish.

    My family has been in New Orleans since there was a New Orleans. I say Courtbouillon also instead of Cou-be-on too. Married to a Grammar Freak for over 30 years you get the memo. BTW "Poor-boy" was on all the restaurant signs growing up. We all say "Po Boy". You can't buy good french bread around here, mastering making French Bagets is one of my next missions.
