Well just about anyone can write an article now days, no matter if laden in facts, science and the appropriate advances of science as we know it.... still just hogwash. Reagan administration was getting some mighty fine oil back then.

There is a place in Memphis called Dyers, it is famous for deep fried hamburgers.
They claim they haven't changed their oil in 100 years, never add to it, new grease comes from the meat, they only filter.
Years back they moved down the street and the national guard escorted the grease down the street in a parade.
I have eaten there and one of the best hamburgers I've eaten.
I asked the wife, and she thinks our fish grease is only 30-34 years old.
No, I don't freeze, don't refrigerate, I filter after use, add to it if necessary and store in the pantry.
I've heard it will go rancid, thats baloney.
Fish doesn't fry as good with new grease.

Anyone can write an article about anything right or wrong but I can't find anything saying to keep oil or that oil can or should be used forever.
If you find one that says different please post.
Even the current owner of Dyers in Memphis said they occasionally add fresh oil wherever occasionally is? Same oil could mean same type, same brad, from the same place?

Cast iron chicken fryer on the stove or cooker base. Clear fry instead of peanut oil, wife has a reaction to it.
I did look it up, and most do say it's not good to keep re-using it.

I had a fry grandpappy or kitchen kettle for years and they do just fine if it is 1-3 people.
But I made the switch to a cajun style fryer and have never been happier.
I got the bayou classic stainless steel 4 gallon, 2 basket fryer and love it. Even for just the 4 I cook for on a regular basis.
And for the occasional 12-15 it does fine also.
It perfectly holds a box of oil from Sams and it lasts significantly longer than other cookers because nothing scorches in the bottom.
