    Default Definitely Cooking Crappie - New Bang Bang Crappie Recipe


    With the stitches in my mouth again soft food is on the menu for the next 12 days or till the stitches come out. Now that the gross part of the post is behind us let's talk a fantastic improvement to the first Bang Bang Crappie shall we?

    New Bang Bang Crappie

    3 Tablespoons unsalted butter
    1 Tablespoon Bang Bang seasoning mix (mine came from Sam's Club Members Mark)
    1 Tablespoon Dark Soy Sauce with Mushroom flavor
    1 Tablespoon Ponzu Sauce
    4 Medium (Off 11-12in fish) Crappie fillets
    Instant Mashed Potatoes made to the recipe on the box

    First off in a large non'stick fry pan melt your butter till is sizzles when you swirl it in the pan. Then add the Bang Bang seasonings swirling to combine with the hot butter before laying the fillets into the now seasoned hot butter.

    Sauté the fillets till they are opaque through then add the dark soy sauce. As soon as you add the soy sauce swirl again to mix with the butter and light crust the fillets before flipping.

    Now with the fillets flipped swirl the fillets again to get a good coat of the sauce on the other side searing the fillets a bit in the process. I reduced the water out of the fish a bit here allowing the fish to sizzle about 1 minute. Once to this point add the Ponzu sauce and swirl again to mix with the other juices in the pan.

    To plate I put a heaping pile of Mashed Potatoes to one side and added some fillets on top but put the rest on the side as the fish is remarkably good by itself as well as with the potatoes. I drizzled the remaining sauce/juices over the plate too. I just never would have thought over potatoes how good this would be. I think certainly better than over rice and I'm a rice person. Something with the sugars & mushroom flavors in the Dark Soy Sauce that is tying everything in well with the Mashed Potatoes.

    I caught some more Crappie this morning to make this again just to make sure it wasn't a fluke the first time out.
