    Default Southern cooking in CT


    Well it's been cold and raining up here in CT, not much to do outside so I decided to cook. I fired up the smoker, trimmed up a rack of ribs seasoned with a couple of my favorite rubs ( there was only a little left in each bottle). What to have for sides? Mama had bought a bag of kale so I was thinking southern style greens. Off to the store I went, I grabbed some spinach, smoked pork neck, and and saw a bag of broccoli slaw mix on sale, figured I'd give it a try.
    I sautéed onions and garlic, added the pork neck and chicken stock. Let that simmer for a hour or so. Pulled the meat off and added it back in, then added the greens. About that time I decided on skillet pan cheesy cornbread, in the oven it went. Then whipped up a small batch of dressing for the coleslaw. Everything came out great.
    While the smoker was running I decided to make some bbq seasoned smoke saltines, the boy really loved those!

    mmmm yum ....btw ,,,,needs to add jalapeno to the cornbread iffin you are pretending to be a far south as Texas.....
