    Reef Donkey is the most underrated fish in the ocean. Muscled in this 40lb’r and not a scrap went to waste. Sautéed the belly meat, milt and collar, brined and smoked the rest.

    Other than your comment about the milt ( not for this guy!), the rest looks delicious! Especially the smoked pieces. I bet that was some fun getting that in the boat.

    Amberjacks are the big cousins to yellowtail jacks , yellowtails are highly sought after in the raw fish circles. Buttery and smooth when raw and pretty much yummy all around.
    Been around the block with a few in my day , sure is fun to watch them beat up people
