    I posted a picture of the Mayhaw juice I collected the other day. Well after all the wine making chores this morning we got to making the Mayhaw Jelly.

    9 cups of sugar
    7 cups of juice
    1 box Sure-Jel
    Makes almost 6 pints after skimming the foam.

    So if you have ever made jelly it's slow then Nuts & Bolts when the boiling begins.

    The procedure is to stir the Sure-Jel into the juice cold then on High Temp bring the juice to a boil that you can't stir down. Add the 9 cups of sugar and return to a good boil. When fully boiling you cook for 1 minute then cut the heat, skim the foam, and start ladling into jars. Once in jars we don't water bath for 10 minutes we just flip the jars over for 5 minutes to melt the gasket seal on the lid. After 5 minutes return the jars upright and allow to cool. You will be hearing the lids Pop randomly till all are sealed.

    I have my juice extraction process down so the color of the jelly is Electric.

    what does a mayhaw look like , is in the persimmon family or something ?
    no clue here , or is it more wild plum like ?

    It is a wild Crab Apple, in the Hawthorne family. Really a Hawthorne berry. I have one variety here that is a West Texas grown tree. They grow wild in Texas in spots. I have a picture somewhere of some Maxine variety Mayhaws I'm holding in my hand to show their size.
