In all seriousness, if you can mentally get there after Slab's post, I have been watching videos on YouTube of cooks in the Med frying large sardines is a light batter then making different sauces to top with. Seems a big deal around there. Lately I have been buying one can at a time of different sardines to see which will be best to batter and fry.

Personally I like the King Oscar skinless boneless in olive oil straight from the can. Frying in a batter with sauce sounds like a restaurant that I would have to dress up to go eat at...lol. Some of the sardine brands really do get fancy (and expensive). I did the sardine only diet, tried many brands and ended up on the Kind Oscar ones. Several good YouTube videos on sardine reviews. Totally interested in seeing what you come up with, I know it will be delicious.

I like the plain ones also. But I put them on a plate and douse them with mustard and hot sauce.

They catch those in the Mediterranean and places like that. I do not think they are canned. They are fresh or salted in an open market. They are prob not as smelly as canned ones....
