    Default Late Lunch With More of Bon Temps' Eggplant


    I don't think Bon Temps' Transom was well out of the driveway and I was inside the kitchen washing and cutting up one of the eggplant he brought since he now knows how much I like eggplant. My wife made a Italian Sausage Bolognaise with homemade, homegrown, tomato sauce. She cooked up some Bowties while I cooked the eggplant.

    Using the leftover Poor-Boy bread toasted, buttered as a side I plated a well spread out layer of Bowties, topped with a thick layer of fried eggplant, covered with ladles of the Italian sausage bolognaise, lastly topped with fresh grated block Romano cheese. I was a beached whale after this meal.

    thinly sliced, breaded and fried eggplant is another one of my weak points , some solid marinara and some nice cheese on top and best get out my way .....mmmmm'nice bro

    When I fry eggplant I need to pace myself. Of course I have to taste a few pieces out of every batch for quality control purposes.

    Some more "Quality Control" will be needed today because I'm going to put down some Bowties and cover with more fried eggplant then top with leftover Shrimp & Eggplant casserole. Hurt me once, hurt me twice. The Animal rights people are going to wonder how these whales keep getting beached so far inland.
