    You can kick it up a notch by pan frying some catfish filets smothered with blackening seasoning and put those fillets over rice covered with the etoufee sauce.

All full. Seafood gumbo, Chicken and sausage gumbo, Jambalaya, and more than I can remember. There is a place here in town who has a truck bring in fresh seafood from the Gulf. It's no wander I can't get below 270lbs.

    Cajun food is the best, but you right we got a lot of chubby cajun food eaters, My self included. Crawfish season right around the corner. I live near Lake Charles , right in the middle of the rice/crawfish pond area. They working the fields to prep already. For those that don't know, they flood rice fields. That makes for a great place to catch crawfish. Both big commercial crops. I will have to post some pictures in a couple months.

    Hey "D", Yes sir, definitely know about those rice ponds. I ran many a mile across I10 through that area running freight from Texas to Florida and back. Plenty of them across there for sure.
