    Default Spring Fresh Crappie


    Ok yes of course we eat Crappie year around, who doesn’t but to me, and I have a biased opinion of course, Crappie caught fresh in the Spring time just taste better if caught cleaned and cooked and no freezers get involved. Step one of course is to catch said Speckled Fish, well Good Friday this year was Great Friday for me, off work, no major wind rain snow event forecast, and a good idea where I might find my quarry. Yep, the 60 degree warming waters of the local reservoir that were pollen colored unfortunately but Claritin and me pushed through Natures yellow onslaught and set a course for a three hour tour. Having caught a few male fish Thursday afternoon in about 10-15ft water on some wood and slate banks, I soon found the correct combination of baits presentations and net skills to fill my limit and be home before lunch.

    A good Spring mess, blacks and whites mostly girls but a boy or two was hanging around this morning contributing his….well you know, genetic insight. Don’t matter, they all good eats and after an overnight in the refrigerator to cool out, it was time to eat.

    The local grocery store had the first Florida corn of the season on sale and some asparagus as well, I knew my side dishes were going to be as fresh as my protein.

    The asparagus and shrooms were sautéed in a Chardonnay and butter sauce while the corn got an Olive Oil and herb seasoning massage, all cooked on the grill of course. Parmesan Crusted Panko Crappie were baking in a 425 degree oven while the rest of the Chardonnay was properly disposed of in the cook, me!

    Our plate came together nicely and I received the gold star approval from the wife. This is one of the main reasons I fish, and I hope you enjoy Nature’s bounty as we do. Happy Easter everyone.
