Filet or split down the backbone?
Me I have an electric scale and I taught my son (14years old) how to use it..so I split down the backbone. Once set up we can clean wash and bag 30 fish in less than 30 minutes.
Note I bought a 14 qt frying pan for cooking. Also my kids can eat the fish as fast when they have to work around the bone.
