Here's Orville's. It's huge, yet it's portable. He even rolls it in and out of his 5th wheel.

I keep it simple and my cutting table depends on where I am at.
Lakeside primitive campsite or shore lunch- I have a 12volt fillet knife, cutting board, and garbage bags on the boat and fillet on the bow.
If the lake has a cleaning station, that's where you will find me.
Last option is at home. I actually have two options at home. I put my boat gear on my trailer storage box and fillet everything on the trailer. Or I pull out my 6' folding plastic table, garden hose and go to town in the yard under an oak tree. My main problem at home is disposal of the guts. garbage comes on Thursdays. They build up one heck of a stank during the week in the summer. Usually I put them in the freezer in the basement until garbage day. But I have been known to forget them in the freezer. Almost thawed guts for dinner one day. Wifey wouldn't have been to happy about that one.

I really like orville's. I need a smaller version. Hanr3, I had a place to throw them away before. Now I am going to have to take them to the dump station about a mile and a half. We don't have garbage service here, but the dump sights are great. Good hours, recycling regular garbage, even paints, solvents, wood, metal and const. material. Never seen anything like it where I came from. I am garage sales and flea marketing this weekend to maybe round up some good used items for my table and sink. Even an estate sale, Thanks for such good ideas fellows, man what a learning sight.

Scissor leg ironing board. Has holes in it, inexpensive, portable, correct height, hoses down easily, folds up nicely, and stores without taking up any space.

Heads and innards get buried in the garden.

Don't use it much. Most fish live for another day, or are given away. Occasionally, I keep what I will eat in a day or two.

I keep mine inside the shop and roll it in and out, also I can move it right beside the boat to put the fish in the sink. I usually clean fish on one side of the shop where I installed a light, receptacle and water hydrant basically just for that, if it"s raining then the table is moved to the edge of the garage door far enough in to keep me dry. we put up scrap 8 foot 2x10 on brackets along side of house and put power under it with bucket between us. inexpensive, easy to clean with hose and sponge cost us for outlet that's it. use our pinch on flood light for nights. works great.
