    If mods want to put this in the recipe section that's fine
    Wife and I are on a diet and are not eating fried foods. Yes. Pray for me! I've been searching for new ways to cook crappie. Here's my latest and greatest:
    Green egg skillet grilled crappie.
    Heat skillet on green egg set at 375. Coat crappie fillets with olive oil. Drop in skillet for 2 minutes cooking one side slightly - remove. Put 1/8" merlot wine in skillet. Should boil when you add it to hot skillet. Flip crappie over putting uncooked side in skillet. About half the fillet should be in wine. Cover with diced or sliced almonds, add a little fresh dill and Parmesan on top. Make sure to have some almonds and Parmesan in between fillets floating in wine. Let wine cook out keeping egg closed (about 8 minutes) Remove fillets and scrape skillet with spatula and add on top of fillets. Be careful to keep egg temp below 400 and don't burn wine Parmesan almond mixture. This looks awful but about the best I ever had! A white fruity wine (I know nothing about wine) may have looked better as the merlot stained the fillets red. The wine almond Parmesan dribbling that you scrape from the pan is a real treat. Probably could do this with most fish, crappie will fall apart but dang, just dang it was good!
