I roll in egg wash, press into Panko bread crumbs and place on Cooling rack on a cookie sheet and bake. All the crunch without all of the oil. Sometimes I add some old bay.

I am usually in hurry and lazy to boot.... I will take a cookie sheet lay the fillets on brush on a little olive oil and sprinkle with Lawerys and garlic powder or anything I see handy and put in toaster oven . It doesn't take long 4 or 5 mins. Taste good and I would guess pretty healthy

I think what this comes down to is
Is there a bad way to cook fish?
Been a big part of my diet nearly 60 yrs , still haven't found a bad way
Unless maybe it's sushi and I ain't gonna try that

Quick and simple way is to get skillet good and hot. Place just a dab of olive oil in pan. Lay crappie fillet in skillet and sprinkle some blackening seasoning. Make sure to not overcook, maybe 2-3 minutes on each side. Very healthy, quick, and tasty dish. Oh, and I love to have white rice and broccoli on the side with it.
