    Default Trying Something Different....


    I normally use Zatterains fish fry on my fish.....thought I would try something different.....friend of mine in Lafayette said he uses yellow corn meal seasoned somehow and he uses Cayenne pepper.....I remember as a kid all my folks used was corn meal so I figured I would give it a shot.....so, baste fillets in mustard, roll in yellow corn meal seasoned with salt, black pepper & cayenne pepper....fry in skillet with coconut oil....I could slightly taste the coconut oil but it was not distracting....I may try another oil....anyway, it was delicious.....this will be my new recipe....that's Pepsi on the side....

    Bruce, I also was raised on corn meal but we went to corn flour after we were married. Now, we use corn flour and corn meal mixed. To me the corn meal is a little to course and crunchy but mixed you get the best of both worlds.

    I agree with PawPaw with the use of corn flour(ground up finer than regular corn meal).

    I think Zatarain's fish fry is corn flour. Unless you get the crispy mix. Then it is flour and meal. I buy it in the big plastic jar. Way cheaper per oz than the boxes and it lasts a long time. Plus I always add Tony's seasoning to my mustard and the fish fry.

    That is what I use if I don't have any fish fry available. I was raised on corn meal and flour mix to fry our vittles! Good stuff there!

    Mr. Bruce, those sure do look good. I like the yellow corn meal with Zatarains added to it.

    The key ingredient your friend told you about is cayenne pepper. Most people think of cayenne as hot. In reality although it is a little hot more importantly it has the best flavor of any pepper Whether we fry fish shrimp or chicken they get a good dose of red pepper
