You need to cook the red beans on a Monday. Red beans are a Monday meal. And, you need to have a corn bread to go with them. I grew up eating mayonnaise with red beans. Sounds strange but it is good.

Dwayne to me there is nothing better than white beans with smoke ham or smoked ham hocks, yum. I'll have to try that method of filleting as I love the skin and the tail.
