    Default Flathead patties


    My wife makes these for me so I don't have all the details but you can work em out yourself. She boils the flathead meat until flakey and let's it cool. She breaks it all apart and plugs it into her salmon patty recipe. Absolutely fantastic. She tops it with a jalapeņo remoulade. She makes it with mayo, red wine vinegar, a chopped jalapeno, juice from one lime, black pepper. Basically make it how you like the taste. Pretty hard to beat and a fish favorite with my family.

    Sounds good with most fish but Flathead belly meat gets fried here .

    Agreed. Flathead belly deserve to stand on its own. We use the filets for the patties. But we also are never short handed of flathead meat so it's not as much of a delicacy for us.

    Wife says don't forget to add spicy brown mustard to the patty mix. Honestly though the remoulade is my favorite part. The guys at my work just refer to it as 'the sauce'. I have found many uses for it but it's an awesome compliment to fish. Let me know if anyone has any questions or if anyone tries is.
