I have a gas smoker right now and its hotter toward the back. I fill the rack with full strips of bacon with the smoker on 230 or so, waterpan full and just a small handful of chips since it don't take long. Cook it for about 15 minutes, open her up and take the "crispier", more cooked bacon from the back moving it to the front and sliding everything else toward the back, close her up and cook for another 10 or 15 minutes. I don't like mine done super crisp so it gives Ms Tammy 6 or so pieces that are done the way she and prefer shiners likes it and about that much that I like, done but not cooked to death. You don't lose very much at all like you do frying.
