Looks like those are fixing to be scaled. You fry them whole?

I always filet, but you loose a lot of flavor that way. I love the taste with the skin left on. I've seen them scaled and filleted, but with skin left on. I have to try it that way myself some time.

The old saying is, closer to the bone the sweeter the meat. I find that especially true with bream. I like to fry them whole. We always scaled, then filleted when we were young. Does not take much longer.

I filet most of them. The smaller ones I leave whole.. I Like to scale and leave the skin on when I fillet.. Seems to keep the flavor in..Occasionally I get lazy and just fillet them but that's not the norm..
