Can stir around the filet in mustard, then corn meal it, then flash freeze it. Once frozen individually on cookie sheet, put into freezer bag,seal it, then put back in the freezer. Once done like that, you never have to thaw them. Just take out of the freezer the amount of filets you want, and then throw em in the grease....still frozen. They come out beautiful.
I do the mustard on catfish just white cotn meal salt pepper for crappie
