    Default Rainy Day Canning

With all the rain today and not much room left in the freezer I decided to can and pickle some mushrooms. I simmered the shrooms for 5 minutes the processed for 45 minutes. The pickled I used balsamic vinaigrette out the bottle. I simmered them for 5 minutes then processed for 45 minutes also. They tasted great before I jarred them so after a few weeks in the jar they should be fantastic. Taking a break right now and eating a bite before filling the dehydrator with the broken bits and pieces of mushrooms.Name: 20150103_123001_resized.jpg

What ratio vinegar to water did you use and is this something you have done before?

None I used salad dressing. Its more of a marinated mushroom than a pickled. This is the first time I pressure canned the mushrooms. I have in the past just water bath canned them.

I woke this morning to my first batch of dried mushrooms and all jars sealed. I took the dried mushrooms and put them in an antique jar I had. Name: 20150104_055715_resized.jpg
