    Default Getting ready for Thanksgiving


    Today I took out some fruit to thaw for Peggy's pies, checked the charcoal and water logged hickory chips and took mason jar and jug inventory.Tomorrow out comes a big ole yard chicken and some red fish to thaw and be pre seasoned on Wednesday. Any one else thinking about getting ready??

    Bought everything . Moved turkey from freezer to fridge. planned menu. Called the old folks and confirmed we are cooking and bringing everything to their house so we can eat together. Checked pecan inventory!!

    ​Sounds likeya got it under control I alsol checked on some strategic placed jugs scattered around. Saving turkey for another day doing a ole yard chicken will thaw tomorrow season wednesday

    Creole butter injected turkey, Tony's on the outside, and fried. Cornbread dressing with fresh mushrooms and red bell peppers. A white, thick gravy to boot. Toting all the fixings to Toledo Bend for some much needed time off. Unfortunately, won't have an infamous pecan pie from Danny. We'll stop at Lea's on our way up there.

    took turkeys out today put them on ice, will inject tomorrow and fry on Wednesday.
    got 5 of them to fry so the boys and I will have a busy day Wed.

    Hey, y'all enjoy yourselves. I'm going next week. Cracked 40 lbs of pecans this week. Will have plenty for pies for our TB gathering!! I also inject my turkey the same way, but I bake it in the oven. Sorry for the hijack, Cappy. Happy Thanksgiving all of you!!

    Glad yall all busy having fun. Having spent 7 weeks away from home we decided to spend our holidays just the 2 of us and do what we like. Instead of a turkey I just took a bog chicken out and soie Red fish I had been saving. I plan to season it tomorrow and put it on the pit Thursday morning. We also picked up some brussel sprouts and they great on the pit too. Peggy baked some crusty glutin free bread for stuffing, its pie baking day so I am trying to stay outa her way.

    Made a trial run and smoked a turkey breast on the Master Built electric smoker and took it to the church supper Sun night....it was a hit. Injected it with Creole butter, rubbed with Tony's and smoked with applewood chips. Apple cider vinegar in the water pan. Ran it at 250 degrees untill a internal temp of 175. It was nice and moist Going to do one for the family this week as well as smoking a ham.

    ​Sounds great, G I bet that apple smoke and cider would go great with the ham and a pork roast too.
