    Default Fatboy Baked Crappie and Spinach


    Great dish for us fatboys. Line a glass dish with fresh spinach leaves, frozen will do,but not as good. We put some dried crushed peppers on the spinach. Then cover with fillets. Cover fillets with olive oil and rub lightly. Season to taste. We use garlic, onion powder and black pepper. We do not use salt, but you can . You also can cover with bread crumbs or parmesan cheese. Preheat oven 400 degrees and bake for 15 to 20 minutes.

    I made this last night and it was delicious except I used coconut oil in stead of olive oil cause it is better for ya. My wife thought it had too much pepper flakes but I thought it it was just enough.

    We've had this twice this week. My wife made a side dish of brown rice. This stuff is really good.
