    There isn't a food forum here so I'll post my 4th of July dinner entrée here.



    15+ pounds of beef brisket smoke to juicy perfection.

    This will get set in the fridge when it cools down and then shaved on Friday morning. It gets served with the usual trimmings and a couple sauce options.

    The picture is straight down on the meat. Its a 22 1/2" grill to help with size perspective. And the thick end at the right is about 5 inches thick. I need to quit thinking about sampling this or I'll have to buy another for the 4th.

    Looks like CTom cooks with the same expertise that he makes plastic baits with-perfection plus. I used to have free access to pecan wood, just love to smoke pork and some cuts of beef with it. Still smoke with apple & mesquite but I sure miss my pecan.
    I don't suffer from insanity; I enjoy every minute of it.....

    This baby was done using apple and hickory mixed. I use chunks, dry, wrapped tightly in heavy aluminum foil. The packets of wood are set right on the coals. Since little air gets in there, they smoke real nice and whats left in the foil when the smoking ceases is some dandy chunk charcoal for another cooking session.

    That should catch anything on two feet and some that are on four feet.
