Looks niec Bro. ANY kind of fruit tree will work. I've used Cherry, Apple, Pecan, Peach and a couple more over the years. I'd like to try some wild pig smoked in Peach wood. Bet that'd be fine. OH, one other trick to add some flavor. I do this on the Egg. Instead of Water, Add Apple Juice and beer, 1/2 and 1/2

Try a whole fish instead. One of my clients from MN won't let me fillet his catch, he smokes them whole, heads and all.

I'll ask, Sammy. If I were doing it...I would salt & pepper and put some lemon slices and fresh herbs in the body cavity.
