I'm surprised how few people fish for gar. They make great quarry for fly fishing. They also taste great. Very much like crappie but their flesh is a little more oily and firmer. The hard part is cleaning them. Their hide is incredibly tough. I use tin snips to cut the hide and then fillet them and cut the meat away from the skin. If you don't tell folks they are gar they will eat them with gusto. If you want the fillets all to yourself then tell folks they are gar.
