You want one that will allow your motor to run at the recommended RPMs at WOT. This is going to vary for people because it depends on the boat and normal load.

I see that my motor has props available from 6.5-9.5 pitch. How does that affect top speed and bottom end?

There is a place either in Chester or near Chester called Propeller Dynamics that can tell you the best size and pitch for your motor based on information about your boat. A friend of mine called them and they gave him the information right over the phone. Hope this may help.
I run an 11 pitch prop for a 9.9 with a riveted hull boat weighting 250lbs. ~~20mph with just me in boat.
hey bennett spend the extra money and get a s/s prop. it will give you a little more speed plus they hold up better.
i used a 10 pitch prop with only me in the boat but dropped down to a 8 with other people in the boat ope this helps
