Like mentioned, I think the 55 lb will suit you fine as long as you get a true variable speed. Not a motor that has 1-5, but one that has a slider bar like a power drive. The remote from Marc danque will do the same. You can barely crack the speed and it'll crawl.
Like ink said, it will help you in the long run for battling wind and conserve battery

I have an 80lb Terrova on a 16'. It will crawl along however slow I want it to go.
The speed is governed by satellite. You set it on cruise control at .1 or .5 MPHand that's what it runs. This isn't just variable speed that you adjust up or down to reach desired speed. If you set it on cruise it is totally controlled by satellite. It will automatically speed up or down to maintain set speed.
I believe, however, that you will find just setting it at lowest level and adjusting up or down will achieve whay you want.
By the way, you can also select the heading and it will follow that course as well. It really is like having a person on board just running the TM.
The Minnkota Power Drive with Ipilot will let you set a track and then you can run the track and all you have to do is set the speed and man the fishing poles.
We have an Ulterra with iPilot and really like it to run a track that you have previously set. Just set back and enjoy the fishing (maybe a little catching).
What does your boat weigh? Mine is about 550 lbs boat and motor only and the 55Lb Minn Kota works perfect for it and it uses hardly any battery life.
