Killer wings on the smoker
Who doesn't like wings? We love em, but I've never done them on the smoker. I checked out a couple recipes that use baking powder in the rub so the skin comes out perfectly ( I don't like a soggy wing). It really was pretty simple. I added roughly 2 teaspoons of baking powder to the appropriate amount of rub for two dozen wings that were dried thoroughly and put them on a rack. I was running behind schedule so the wing went on the smoker at the same time I fired it up (known as the 0-400 method) I checked and flipped them several times during the cook. At the 1 hour mark they hit 190 degrees and were pulled for saucing.
The sauce was about 85% Franks Redhot sweet chili and 15% Japanese bbq that was on hand. After saucing they went back on to set the sauce for a few minutes. Again no nicely plated Photo like Rojo does because they didn't make it that far!
Also the Blue Moon in the ingredients photo wasn't for the wings... that was to keep the cook in good spirits [emoji16]
