Easy Lemon Icebox Pie
This is a super easy & tasty desert.

1 box room temperature Cream Cheese
1 Graham Cracker Crust pie shell 9in is preferred
1 can Sweetened Condensed Milk
1/2 cup fresh squeezed Lemon Juice
Zest from the Lemons
1TSP Vanilla Extract
Place the soft cream cheese in a bowl large enough the use a electric hand mixer in. Add the can of sweetened condensed milk and whip till smooth.

Add the Lemon Zest & Vanilla Extract to the filling and whip some more. A trick I do is to whip the filling real good to add some air at this point before adding the Lemon Juice. Slowly mix in the Lemon Juice whipping again to fluff then quickly pour into the Pie Crust. I rotate the filled crust quickly back and forth to level before popping the pie in the fridge.

Looks great. I never been a desert maker. I can only do box cake. I can also do homemade sweet potato pie and home made pecan pie. I have received many compliments on both. Now I have to try this lemon pie. It just happens to be my favorite. Thanks for the recipe. If you will post a thread for easy biscuits. I still never even tried to do them. If you already already have one on here, I'll try finding it.

Finally made mine today. 2 modifications. 1. I used a regular pie shell, because the wife prefers it and I had one left from the holidays. Just baked it in the toaster oven first. 2. I had a lemon that I bought last week for the zest, but it had already went bad. Pie was still awesome and thanks for the recipe. Was so easy.

Forgot to add, did a crawfish etouffee today also.Came out great, very tasty, even though I used the chinese crawfish. Gonna be hard to get local this year. The drought hurt them bad. The few they catching in the ponds are selling for $9 a pound live. Most of the boilers are not fooling with them. Said they would have to sell for $16 a pound . Even us crazy cajuns wont pay that much. Hopefully in March it will get better. The price last year was $6 a pound boiled premium size.

Glad you found the pie easy to make. Maybe the Bell River guys will have a good catch. The Pearl delta produces a lot of crawfish if we get the seasonal flooded timber. Fat ones too.

Atchafalaya spillway has been super low all winter. That will hurt the crawfish production in south central La.
