Really looks delicious ROJO. Our pastor makes a mean persimmon pudding which we are going to indulge in tonight at Bible study. It’s an old recipe his mother used to make with origins in Indiana. I am going to try to get the recipe. If so I’ll post it up here.
Persimmons have such a unique flavor. I made this with Hachiya persimmons that were given to me. My tree is a Fuyu persimmon. I think the Hachiya tastes better but it is a astringent variety. We had them in a bowl with ripe citrus fruits to kinda gas them into softening.

Do you ever eat any crunch or let them get fully ripe. The non-astringent Fuyu persimmon. I've been looking and thinking about persimmons. American persimmons were all my grandparents had in the fields and yard. My parents have one on the fence line behind their house. The deer usually get all of them if you don't constantly check them.
I love persimmon pudding. I always requested it instead of birthday cake from my grandmother.

Me either but we’ve tracked down some sources for persimmon pulp and will be making some soon.
I made 4 more loaves today but with a new ingredient. From King Arthur Flour we bought these Ginger bites. Dried, sugar coated, pieces of ginger. Man when you hit one while chewing the Persimmon bread ascends to a whole new level of good.
I found recipe's for apple sauce cake , date/walnut bread and zuchinni bread online. Looks like I will be trying them soon. My sister used to make them every year for the holidays.:santa
