we rarely cook them at our house , lots of others in these parts eat them up , but to be sure we just don't eat enough wild pork at our place to have a bunch of recipes.
carnitas in these parts is the number 1 recipe for wild porkers , with all day on the smoker in close second place for some folks.
carnitas done right with them is one of those treats that can make you appreciate south of the border foods for sure .

They look nice and healthy. Hope they don't run your deer off. I like to pressure can stew meat sized pieces and grind the rest into hamburger. The burger is very good for anything you would use beef burger for....add seasoning before cooking if you want sausage patties
deer get used to them ,or have in these parts , often times on camera you see the deer all look in one direction and blow out , then about 2 or 3 minutes after the hogs leave the same deer often show right back up .
we just can't consume enough meat here to come near putting a dent in them and don't want to process more or have the room in any of our 3 freezers for more food .
but as noted the ones in the images are eater size for darn sure if you like smoking them puppies :highfive
The Spanish explorers brought the hogs to Florida 400 years ago. So many generations of deer grew up with them. The only thing deer dislike more than hogs are Black Bears. I was in a Hunt club near the river and there are tons of Bears there. Some days You could see 5 a day from my bow stands in the thick stuff. . Between the Bears and the hogs the Deer were a nervous wreck. they were always high strung.. I hunted with a Homemade Recurve bow back then and would not shoot Deer over 10 yards since they would duck and run at any noise. We also had wild Monkeys... We lost access to that property when a Rich guy bought it and put up miles of 10 ft fence and a million dollar house.. We got a 3000 acre piece 8 years ago 60 miles NW towards the Gulf of Mexico..it is wet over there but bears are pretty rare..I have never seen one in person on the property and only got maybe 4 pics in 8 years.. 4 years ago I had a 120 lb Boar hog that the young bucks let feed with them.. It was pretty odd to get pictures of them together, the does did not like him around.. First day of Archery season I was climbing up a ladder stand and heard something walking up to me..it was cracking day light and I could see a black shape less than 10 yards in front of the ladder stand. I got up in the stand, pulled bow up to stand, put day pack on a limb, knocked arrow.. hog just stands there, it started walking circles around the stand..about 4 or 5 minutes later I could see good enough for a good shot.. He was broadside about 10 yards in a patch of white sand... The deer lost their hog buddy and we got a bunch of hog burger. Like yourself we can hog hunt all year, no limit or season. We used to be over run with hogs and I would shoot everyone I could..I had trouble giving them away. Everybody wants a free hog till you call them and say " I got you a hog".. 9 times out of 10 I would get "Oh, can you skin, quarter and Ice it for me?" I did a few and grew tired of that... We had some guys come in with traps, they might have caught 2 or 3 ..We had a guy with dogs come over and they live catch them. Last time they caught 65 in 3 days. I only have about 5 quarts of Canned hog meat on my shelf, might just pull one down, add some sweet and spicy BBQ sauce for tonights dinner. I just bought some low carb flour wraps yesterday.
I use to have a hog hunting spot near Mexia, TX. A friend of mines was a NFL player and he had ranch there. He sold it some years ago and I have not been hog hunting since. Like you say those are perfect for the smoker.
Attachment 468556This group just showed up for the first time this morning.. they ran the deer off and hung around for a few minutes. If they come by the next few days I will go over with a rifle and run them off..
they will likely be back , once they find food they seem to be magnetized to it .....
I am sure you could find some folks who need the serious protein that these sounders provide. I would try and line up two or three and see if you can take them out in one shot. Now THAT would be epic. Those look like perfect pig roaster size as well. Time for a neighborhood cookout AND fish fry
IF I was closer would have my son and his crew ready to go pick up a pig and they are great at skinning and processing mass quantities.
