Awesome technique. I do it close in the same.
I also do it similar except I use the electric knife to cut out the ribs and then zipper the fillets to remove the mud line
I do the same but leave the filet whole and not cut in half.

Great video by a guy with plenty of experience. That’s a real nice knife he’s using. I’ve used the knives from the cheaper side of town, goodwill and other thrift stores. Last one cost me $3. Lasted a few years and when it quit I threw it away with a smile. So much quicker.
Been doing it that way for years. When you get in rhythm with those and Tilapia, it usually takes less than 30 seconds per fish. Good video to share Dave.

BPS. I love this knife but I recommend buying the 2 year warranty with it. I clean so many fillets in a years time that the trigger mechanism has failed me on a couple of knives before the one year warranty. The warranty is $25 for two years. The knife is $99 at BPS but I have seen it on sale for less than that.
It comes with 3 different sets of blades, and charger. I have never run the battery down on it after 4 different cleaning trips. I usually charge it after the fourth cleaning. Grin.
